Did the Easter Bunny leave a few too many Easter eggs at your house? Don’t fret! AKA Mom found the best ideas for those leftover eggs. The good news is that, as long as they are left in their shells, hard-boiled eggs will keep in the fridge for up to 7 days. But with these hard-boiled egg ideas, they’ll likely disappear much faster than that. In fact, you might find yourself boiling another dozen.
Safety note: Be sure to use food-grade dye for your eggs and don’t eat eggs that have been out of the fridge for more than two hours total.

English-Muffin Egg Pizzas
This recipe is so simple, yet so delicious. Toast English-muffin halves and place on a cookie sheet. Drizzle each with olive oil, then layer on tomato slices, hard-cooked egg slices (1/2 an egg each), and a little grated mozzarella. Sprinkle with oregano and kosher salt. Broil 5 minutes or until the cheese melts.
Put a New Twist on Deviled Eggs
Peel the shell from 6 eggs, cute in half lengthways, scoop out cooked yolk from the white and put into a mixing bowl with 1 tablespoon olive oil, 1 tablespoon of plain yogurt, 1 tablespoon of Dijon mustard and a pinch of salt and pepper. Mix thoroughly and spoon mixture into the egg white halves and sprinkle with paprika. Voila! You have a truly eggscellent snack!
Sliced-Egg Sandwich With Herb Mayonnaise
Combine 1 tablespoon of mayo, 1 tablespoon of Dijon mustard and 1 tablespoon of chopped fresh flat-leaf parsley in a small bowl. Spread the mixture over evenly on two slices of your favorite bread. Layer one slice with 2 sliced hard-boiled eggs and a ½ a cup of watercress leaves and season with salt and pepper. Top with other slice of bread and this yummy treat makes a perfect lunch.

A wonderful mask for beautiful nails
Mix 1 hard-boiled egg yolk with 1 teaspoon of honey, 1 teaspoon of olive or vegetable oil and a few drops of lemon juice. Apply the mixture over your nails for 20 minutes. Rinse off with warm water and follow with a hand moisturizer.

Make cat food for your favorite feline friend
While raw diets have become very fashionable, many vets will tell you that many raw foods could potentially be infested with parasites or bacteria. You should cook any meat you intend to feed your cat to kill any bacterial contaminants. You should also remember that raw meat alone could be lacking in sufficient nutrients to keep your cat in optimum health. You may need to add vitamins and minerals to help keep your cat healthy. Always speak with your vet before switching your cat over to a raw diet.
Chunky Meat and Rice Cat Food
Ingredients:
- 1/2 pound ground meat (chicken, beef, lamb or turkey are fine)
- 1/4 cup rice
- 1 large hard-boiled egg
- 4 teaspoons olive oil
- 1 cup chicken stock
Directions:
Mash the whole hard- boiled egg. Place all the ingredients into a saucepan and bring to the boil over a medium-low heat. When the stock is boiling, reduce the heat and simmer gently for 20 minutes or until the stock reduces. The rice will expand and swell and absorb much of the liquid. Remove your home made cat food mixture from the heat and allow it to cool completely. Blend the mixture in a food processor until all the ingredients are mashed together. Then place into an airtight container and store in the fridge for up to 3 days.
